I used to think it was gross. But when it comes to melted cheese on a sandwich or burger*, it is prime. Looking at a menu right now that has a grilled cheese with cheddar and I just don't get it.
* Depending on the sandwich. Like American cheese on an Italian is fucking sacrilege.

It melts well, but I like flavor in my cheese so I will take cheddar over it anytime.

I like American cheese, but I think that's because of nostalgia. I don't really think of it as being real cheese.

Seems to me the consensus is something like American cheese being the culinary equivalent of lowering your standards as the bar is closing

If you're getting actual American cheese (like from a deli counter), there's nothing wrong with American cheese. It's great for grilled cheese, breakfast sandwiches, on a burger etc.
I wouldn't eat Kraft singles or anything similar though, that's not cheese.

Funny this comes up, I just had to defend American cheese.
I don't even want to get started on how many better burger options there are, but no cheese melts as well in scrambled eggs as American cheese. I just made a huge batch of breakfast burrito filling including some melted AC in the eggs - they are delicious this way.
