The last time I put much effort into baking was to make caneles. They never turned out the way I wanted but eventually I'll make another attempt at mastering those

we have yet another damn potluck next thursday for st patty's and i'm pretty sure i'm gonna try cheddar onion biscuits which will actually involve a shitty attempt at baking. so that oughta be fun.

Last thing I baked was Thick and Chewy Chocolate Chip Cookies Bars on January 21. #kitchentrapperkeeper
Probably time to bake again; maybe this weekend.

Almost nothing I bake beyond cookies turns out quite as well as it should because of the altitude. Biscuits of any kind are always flat.

I haven't found a place to get them since Bad Wolf Coffee closed. That place was incredible. I saw some at La Colombe in Andersonville a couple weeks ago but I didn't try theirs. Maybe I'll do that this weekend

Bad Wolf was indeed a good canele. Iliana Regan does a nice one as well. The ones at La Colombe are from La Boulangerie I believe and pretty good.

I baked one of those "take home" pizzas from Mariano's last night. I make sure to broil it so I can cook the top evenly -- delicious!

My brownies always turn out cake-y instead of fudge-y. What am I doing wrong? Reduce the number of eggs and/or add a bit of vegetable oil I still have yet to nail brownies tbh but everything I've learned is that more eggs = cake-y brownies. The oil should keep them moist and a little denser.

I might make some two ingredient dough today and try some things out with it. It's just equal parts Greek yogurt and self rising flour (you can diy the self rising flour if you just have regular flour in the house). It's supposed to have a bit of a sourdough tang due to the yogurt and I've seen some nice looking bagels and calzones made with it.

Salted Caramel Barsand some Blondies These salted caramel bars went slightly awry, I did not melt the caramel to the right consistency or something. It hasn't really hardened - its a super, SUPER chewy layer of caramel over the top of some shortbread. I can't say its not good, but its kinda not fun to eat. I made vanilla cupcakes from scratch afterward and knocked them out of the fucking park, it was a lot of work but a legit cupcake.

The boss move is to get the "Everything Spice" we found at Trader Joe's. VERY WW friendly.
