I've got some Boar's Head deli mustard that is surprisingly delicious.

Missed this one the first time around.
Definitely ham, turkey, roast chicken for sandwiches that need mustard.
Only roast beef jumps out as a sandwich that needs mayo. Pepperoni is underratedly gluttonous and good with mayo.
Salami could go either way.

idk wtf herbs/spices they use other than rosemary, but Fairway Market carries Calabrese Ham in their deli and it's the all-time best sandwich meat short of getting freshly sliced pastrami or smoked meat at a legit NYC/Montreal delicatessen.

I use a mustard for almost any sandwich but the saltier the sandwich the more intense the mustard. With a turkey sandwich i might rock a honey mustard. The only sandwiches that I think stay mustard free are mayo-based deli salads.

That's the one thing that came to mind when thinking about what sammies don't warrant mustard. I want the ingredients in one of those to sing on their own - a mild dab of mayo or aioli is the only thing I go for.

Back in the day my high school cafeteria used a Kaiser roll instead of white bread for the BLTs and it was probably better than 75% of Zagat's 50 Best Restaurants.
