I don't hate mayo, but it's kind of pointless as long as so many delicious versions of mustard are available. This. But also I do hate mayo.

I love mayo/"aioli" with fries.
But yes, Rango that was kind of my point. A lot of people seem to be down with aiolis but not mayo when really it's just a trendy name most of the time.
EDIT: I should add though, Scoots, mustard is still the best condiment in my mind.

anyway aiolis are a trend which means a lot of bad places make a bad aioli for fries because people will order it. that doesn’t change the fact that at a good place an aioli with fries will probably be pretty good

I was dating a chef once and so excited to take him to Hopleaf for the mussels and frites with garlic aioli. He took one bite and was like "this is Hellman's." I was like IT IS NOT THIS IS A HOUSEMADE AIOLI HOW VERY DARE YOU and then he asked the waiter and the waiter was like "uhhhh well we add the garlic here."

Most fancy mustards are just come out of a giant tin that just says "Mustard" on it and then cranberries are added or whatever. People don't want to pay for condiments so thats how it goes.
I hate Meli Cafe because they only have shitty homemade ketchup its like let me get some corn syrup on my potatoes if i want it.

Yeah first time I tried to make hummus it was super thick but still managed to taste good. I make a really good tzatziki, though.
